where does a candy thermometer sit at in the pan when using it to cook fudge , candy etc.?

should it touch the bottom of the pan ,rest about half way into the ingredients or what?

    It should be above the bottom of the pan, about half way. If it's touching the bottom of the pan, it's reading the temperature of the pan, not the ingredients.
