Your only worry for food poisoning would be from the turkey. Cook your turkey approximately 15 minutes per pound at 350 degrees. To test a turkey for doneness, see if the legs are dropping away from the carcass or stab the breast portion with a meat fork, if the fork slides in and out easily and the juices are running clear, not pink, then chances are it is done. Make sure to stab the turkey in the thickest part of the breast. Meats must be cooked to an internal temperature of 160 degrees to kill any bacteria which prevents food poisoning. On average a 10 pound turkey should be in a preheated 350 degree oven for 2 and a half hours to 3 hours time. Are you stuffing the turkey? If so the time will be longer, to have a shorter cooking time, do not stuff the turkey and peel a large sweet onion to stuff it with. The onion will keep the turkey from getting dry and adds a subtle sweet flavor to the meat. You can also cover the turkey to hold in the heat and it will cook a little faster, make sure to uncover it in the last hour to crisp up the skin and brown your turkey. Good Luck
