  1. Lollipops
    Makes about 1 1/2 dozen
    2 Cups sugar
    1/2 Cup light corn syrup
    1/2 Cup water
1/8 to 1/4 teaspoon oil of orange, lime, peppermint or spearmint
    few drops of food coloring
1 1/2 dozen lollipop sticks or wooden skewers
Mix sugar, corn syrup and water in a heavy sauce pan, insert a candy thermometer (if you have one) and heat stirring constantly, over moderately high heat until sugar dissolves; cook, uncovered, WITHOUT STIRRING to 300 degrees F. OR until a drop of syrup turns brittle in cold water. Cool 2-3 minutes. Meanwhile, lay lollipop sticks 3 inches apart on buttered baking sheets. Add flavoring and coloring to syrup, mix gently, creating as few bubbles as possible, then drop from a teaspoon onto sticks forming lollipops about 2 1/2 inches in diameter. Cool, lift off sheets –not by sticks, but by loosening with the point of a knife.
For butterscotch lollipops make as directed but add 1/2 cup firmly packed brown sugar and 2 tablespoons of butter with the rest of the ingredients. Flavor with 1/2 teaspoon of vanilla extract. Do not color.
    Rule of thumb for temperatures:
Thermometer reading listed first then the Candy stage then the Test
230 – 234 Thread—-Syrup will form thread when dropped into water
234-240 Soft ball–Syrup will form soft ball when dropped in water
244-248 Firm ball-Syrup will form firm ball when dropped in water
250-265 Hard ball-Syrup will form hard ball when dropped in water
270-290 Soft crack/Syrup dropped in cold water will form pliable strands.
300-310 Hard crack/Syrup dropped in cold water will form brittle strands.

An expensive candy thermometer is not necessary get an instant read thermometer with a temperature range up to 500.
