How can I tell if oil is hot enough without a thermometer?

I am going to fry chicken wings and the recipe says to make sure the oil is a certain temp. I don't have any way to know how hot the oil is, are there any ways of figuring this out? I am making the wings in 20 minutes so I can't go out and buy a thermometer.

  1. Sara Moulten sticks a wooden spoon handle in hers, if the bubbles collect around the handle its hot enough. I think that would be safer than flicking a few drops of water in .
