I want to make a recipe and I need to deep fry it. It says the oil needs to be at 350 F. I don't have a thermometer to measure this, but i don't know what kind I should buy.

my mom’s cooking a christmas turkey, the meat thermometer broke and she wants to make sure the liquid that came out is not going to poison us, it’s apparently not mercury like normal thermometers

I have a turkey in today, almost 20 lbs. According to the cooking charts it should have taken 4 1/2 hours to cook but the pop up timer thingy went off at three hours (at 350 degrees). I don’t have a meat thermometer to check. How can I tell if it’s really done?

I’ve heard instant-read thermometers are popular, but it seems like a candy thermometer like this one— http://www.kitchenkaboodle.com/product_detail2.php?sku=DTTC-W!316 —might be more useful. If I could only buy one which should I get?
